What I’ve been eating

Things I made and/or ate at home this weekend in spite of (or concurrent with) slicing up my right pinky:
Pomegranate-lime popsicles: Ikea popsicle tray (more under-$5 shopping) full of the new pomegranate limeade from Trader Joe’s
Sweet potato chips: Very thinly sliced sweet potatoes sprinkled with kosher sea salt and baked in a 250-degree oven for about an hour. Fat-free — no joke.
Smith Meadows pork chops: Local piggy marinated for a couple of hours in a red wine vinaigrette, then thrown on the grill pan for about a minute too long on each side. Whoopsie. Still tasty, though.
(Pretty, too. I’d have taken a picture, but there was a cotton-cocooned finger in my way.)
Plain, homemade quesadillas dipped in (jarred, warmed) pizza sauce: This is a foolproof fall-back for me. Don’t knock it ’til you’ve tried it.
Nonfat vanilla yogurt (organic) with local strawberries: I hate yogurt with fruit chunks in. Can’t eat it. But slice a few real strawberries into vanilla yogurt, and I’m sold.
Drawback to eating fresh food and lots of produce? My garbage smells like a compost bin. Thank god for airtight step-cans.
On the menu in the coming days:
- Fresh roasted-red-pepper pasta (from Cheesetique) with shrimp in a little tomato sauce
- Salads made with local greens, mini cucumbers, strawberries, and whatever else I toss in. Possibly sauteed local asparagus. And mushrooms. Or grapes. I don’t know.
- Roasted chickpeas
- Wild-caught salmon, probably baked with onion and garlic…and maybe tossed into a salad!
- More pomegranate-lime popsicles…mmm…
Ooh, sounds all very yummy and wonderful. And I’m impressed how much you could cook with a bandaged pinky! The sweet potato chips sound especially yummy. I tried it once, though, and it was extremely unsuccessful. Btw… if you want a yummy easy salady thingy, check out orangette.blogspot.com and look up her (Brandon’s) chickpea salad. If you haven’t already come across it, it’s so yummy and easy and fresh.
I have seen that salad. It’s on my list. 🙂
By the way, those roasted chickpeas? Unbelievable.
Those look exceptionally tasty. If it cools off here soon, they’ll be first on my list for the oven. Also, I noticed how many times I used yummy in the last comment. Yummy.
