The latest in pantry-diving

  1. 1/2 a bag of pasta (or whatever’s left in the bag)
  2. 1/3 bag of frozen spinach
  3. 1 leftover baked chicken breast
  4. 4-5 Tbs. balsamic vinaigrette

Bring pasta water to a boil. While waiting, dump spinach in a metal sieve and place it over the pot of water. Spinach will be thawed/warmed by the time the pasta water is ready.

Set spinach aside. Note the green tint of the pasta water. Bonus nutrients! Hooray!

Salt pasta water and dump in the noodles. Cook per package instructions.

Break up chicken in a bowl. If you have the patience to pull it with a fork, that texture works best.

Add spinach to chicken and set aside.

When the pasta’s done, drain it and toss it back in the pot over low heat.

Stir in half the vinaigrette and let it soak into the pasta.

Stir in chicken and spinach mixture and let it sit to bring everything to the same temperature.

Add the rest of the vinaigrette, stir to combine.

Eat on couch in front of Law & Order. Or Hardball with Chris Matthews. Whichever.
